ABOUT: Thomas is one of New York’s most compelling culinary voices, known for leading the kitchen at The Modern, the two-Michelin-starred restaurant at the Museum of Modern Art. Born in England and raised in Canada and Texas, Thomas found his way to New York at just 19 and quickly immersed himself in the city’s highest levels of fine dining. After earning his Grand Diplôme from the International Culinary Center with an emphasis on French technique, he trained at culinary powerhouses including Blue Smoke, Eleven Madison Park, and Per Se, and even honed his craft in Paris under three-Michelin-starred chef Yannick Alléno at Le Meurice. Early in his career, he represented the USA in the Bocuse d’Or, finishing 10th in the world—a remarkable achievement at just 23 years old.
In 2014 Thomas joined The Modern as Chef de Cuisine and, in 2020, was named executive chef, where his refined yet playful menus champion seasonality, precision, and creativity across multiple dining experiences — from the elegant prix fixe to the intimate Kitchen Table. Under his leadership, the restaurant’s contemporary cuisine continues to shine on the global stage, contributing to its sustained two-Michelin-star status and glowing reviews from critics and diners alike. Whether teaching technique or discussing flavor philosophy, Chef Allan brings infectious energy and world-class expertise to every kitchen and classroom he enters.
