ABOUT: Lauren DeSteno knew she wanted to be a chef from the age of eight, growing up in an Italian-Spanish family where food was central to daily life and encouraged by two grandmothers who nurtured her curiosity. She experimented constantly—shopping for random ingredients to cook for her extended family, catering cocktail parties as a teenager, and working summers for a professional caterer. Though her parents were initially hesitant about a culinary career, her father struck a deal: finish college first, then pursue cooking if she still felt the same. After earning a degree in finance and Spanish from Fairfield University, a transformative semester in Seville—where she experienced the power of simple, fresh ingredients firsthand—cemented her path. She went on to attend The Culinary Institute of America, where the rigorous, professional training shaped her discipline, technique, and teamwork. After graduating, DeSteno began her career at Eleven Madison Park under Daniel Humm, gaining experience across both savory and pastry kitchens and forming key industry relationships. She later worked with Rocco DiSpirito on television and cookbook projects before joining the opening team at Marea and then Ai Fiori, where she continues to lead with the same high standards and collaborative approach instilled early in her training.
