After earning national recognition for launching Ramen Yebisu in Brooklyn, he took his expertise to the hidden izakaya and tasting room KEI. He is celebrated for his authentic Sapporo-style miso ramen. His signature dishes rely on highly technical preparation, including a specialized 48-hour fermentation process for his wavy noodles and meticulous chicken, pork, and Wagyu broths. Throughout his career, he has honed his technique across Michelin-recognized kitchens and traditional Japanese dining establishments.
