ABOUT: Elijah Tarlow grew up cooking in his parents’ restaurants. His dad is the respected restaurateur Andrew Tarlow. He started professionally when he was 18 at Diner in Brooklyn. He then cooked for three years at Roman's where he learned to appreciate seasonal Italian food.
Aiden Dummigan began his culinary journey at age 14 washing dishes and making salads at a restaurant in his hometown of Portland, Oregon. He fell in love with cooking, and in 2021 he moved to New York to pursue his passion. He’s worked in the kitchens of Altro Paradiso, Roman's, and was most recently the co-chef de cuisine at Borgo.
Borgo is a neighborhood trattoria serving seasonal, wood-fired cooking, centered around a hearth — and garnering rave reviews from The New York Times, Grub Street, and The New Yorker. Jordan Frosolone is the executive chef.
