ABOUT: With a strong background in marketing, Tommy Tardie successfully transformed his vision into reality, earning numerous awards for his establishments, including "Best Bar Group in America" (2022) and "Best Bar in America" (2021) from Whisky Magazine. He’s committed to community engagement, actively supporting local businesses and initiatives, and sharing his love for whiskey and spirits through tastings and events that benefit organizations like Leket Foundation. He is preparing to open The Flatiron Room's newest location in Miami in Fall 2025.
Originally from the Philippines, Randle Pagaragan moved to Oahu in 2006 and started his career in the dish pit of a local hotel. That behind-the-scenes entry sparked a passion that led him to culinary school and eventually to Restaurant Senia in Honolulu, where he trained under Chefs Chris Kajioka and Anthony Rush, working his way up to senior sous chef. He later helped launch Hau Tree at the Kaimana Beach Hotel, again stepping into a leadership role.
After staging at The French Laundry — an experience that led to a job offer — he went on to cook in acclaimed European kitchens like Jordnær in Copenhagen, Ocean in Portugal, and Julemont in the Netherlands. Randle approaches every dish with a global lens and a fine-dining sensibility. His cooking is intentional, refined, and grounded in genuine hospitality — the kind of philosophy we value deeply.
