ABOUT: After completing her culinary studies at the Institute of Culinary Education, Luisa Caicedo joined the team at Perry St., an acclaimed restaurant by Jean-Georges Vongerichten, led by his son, renowned chef Cédric Vongerichten. Under Cédric’s mentorship, Luisa honed not just her technical skills, but also her creative outlook.

For Luisa, passion is the essential ingredient in any successful endeavor. “Skills can be learned,” she says. “But passion — that’s what drives excellence.” This belief guided her journey across continents. After three years leading the kitchens at Le Burger and Vong in Jakarta as chef de cuisine, she spent seven months traveling through Nepal. She then took on the role of executive chef at upscale café Mondoux in Dubai, UAE. In 2022, Before Luisa returned to New York City to reunite with Cédric, this time as executive chef at Wayan and Ma•dé, she served as the pre-opening executive chef for the Wyndham Grand West Bay Beach Hotel in Doha, Qatar.

Chef Jumin Bae’s culinary journey began in the countryside of South Korea, where his love of nature and an early job at a local restaurant sparked his passion for cooking. Before moving to the U.S., he ran several butcher shops, gaining a deep understanding of meat anatomy and mastering the knife skills needed to break down and utilize every part. That foundation in butchery — later expanded to include fish — has been a cornerstone of his precision and versatility in the kitchen.

Starting at Perry St. as a prep cook, Jumin quickly earned the nickname “Machine” for his speed, consistency, and high-yield rates. As he worked his way through every station — from Garde Manger to Grill to Tournant — he built a comprehensive mastery that led him to become sous chef and now chef de cuisine.
