WHO: Jacob Siwak is chef-owner of Forsythia, a Roman trattoria located on the Lower East Side.

ABOUT: Siwak grew up in St. Louis, attended culinary school in New York City, and worked at restaurants in Rome and Bologna before returning stateside to open Forsythia. The Lower East Side trattoria offers traditional Roman fare and handmade pastas using ingredients selected at the peak of their season. The Michelin Guide adored his carbonara ("which never disappoints"), "the warm, pillow-like slices" of fresh-baked focaccia, and the short rib agnolotti with duck jus (which "has few equals").
