WHO: Max Green is a New York native with over two decades of experience in the hospitality industry, where he has played a key role in shaping some of the city’s most acclaimed bars. Chris Bidmead is a highly respected global bar consultant, known for his exceptional track record in driving profitable bar operations over the past 15 years.
ABOUT: As head bartender at Amor y Amargo, Max helped elevate the intimate space to global recognition, earning spots on both Tales of the Cocktail’s Top 4 and The World’s 50 Best Bars multiple times during his tenure. In 2018, Green opened Blue Quarter, a speakeasy-style cocktail bar in the East Village that reflects his signature style and dedication to craft. From 2017 to 2020, he served as a global bar consultant for Marriott International, designing cocktail programs for luxury properties across several continents.
Most recently, as Corporate Bar Director for Hospitality Department (Press Club Grill, Point Seven, and Bronze Owl), Green developed standout beverage programs that complemented and enhanced the culinary vision of each concept. He now consults independently, partnering with restaurant groups, hotel operators, and brands to create innovative beverage programs, build strong teams, and develop winning strategies.
Recognized for his innovative approach, Chris has developed a signature methodology and standard operating procedures that have set him apart in the industry, with a strong focus on education and sustainability. He is dedicated to creating and implementing sustainable programming, as well as promoting eco-friendly practices in bar and restaurant design, particularly in the realm of ergonomics.
In addition to his role as the owner and operator of Bar Methods, an acclaimed bartender training program, Chris is a trailblazer in brand development and programming. His annual summit, which brings together bartenders from around the globe, has been instrumental in shaping the future of the industry and nurturing the talent of tomorrow.
