ABOUT: Born in Bolivia but internationally traveled, Sam found his true calling in the kitchen where he has spent the last 8 years of his life. His culinary education comes from the International Culinary Center, which he attended for six months after being a dishwasher and feeling like he needed a formal education to reach his goals. Having worked through many New York Michelin-starred restaurants such as Jungsik, Per Se, and Momofuku Ko, and European restaurants such as Noma and El Celler de Can Roca, he acquired the skills to bring his memories and flavors to the plate. He seeks to make a menu to celebrate the colors of Latin American food within the unique backdrop of Brooklyn Heights.
