WHO: Noah Poses is celebrating five years at The Fulton, Jean-Georges Vongerichten's first seafood restaurant. He is also the culinary director overseeing the Tin Building, The Fulton, Malibu Farm, Pearl Alley,The Rooftop at Pier 17, and Lawn Club.
ABOUT: A Philadelphia native, Noah grew up in his father’s restaurant business. After volunteering in the kitchen of Morimoto, he worked his way up to executive sous chef at The Modern and then moved to Washington DC to be the executive chef at The Watergate Hotel. In 2019, Noah was approached by the Jean-Georges team to oversee an upcoming restaurant opening, The Fulton, Jean-Georges’ first seafood restaurant. It opened to immediate critical acclaim, earning two stars in the New York Times and many other accolades. In November 2023, he was promoted to culinary director and now manages the culinary operations of the Tin Building, The Fulton, Malibu Farm, Pearl Alley, Lawn Club and The Rooftop at Pier 17, supervising a team of over 100 people across all restaurants.
