ABOUT: Falco grew up in Mt. Kisco, New York, where his mother operated a cake company. He began his career at Einat Admony’s West Village restaurant Bar Bolonat. Then he opened a seafood restaurant for Joe Carroll and spent two years at the critically acclaimed St. Anselm. He joined the Rolo’s team during the early COVID days, starting as a prep cook and working his way up to chef de cuisine. He was featured on StarChefs earlier this year.
Kalachnikoff earned his stripes working with Michael Anthony at Gramercy Tavern and Peter Hoffman at Savoy before opening Rolo's with two other alumni from Gramercy Tavern.
