WINE & WAVES: A COASTAL CULINARY EXPERIENCE WITH CHEF SEADON SHOUSE & FLOWERS WINERY

WHO: Chef Seadon Shouse is the executive chef of Halifax, and Little Bar in Hoboken, NJ, and Timber Cove Resort in Sonoma, CA.

ABOUT: Growing up in a small fishing village in rural Nova Scotia, Canada, Seadon developed an affinity for seafood at a young age—harvesting wild mussels and fishing for mackerel in front of his own home. He's been at the helm at Halifax since 2015, which was inspired by his experiences in Nova Scotia, his rich culinary career, his passion for farm and coastal fare prepared with local, sustainable ingredients from both the Northeast and West Coasts. His passion for seafood and fine California wines led him to Timber Cove Resort in Sonoma County, California where he is executive chef-partner. He is also exec chef-partner at Little Bar, an upscale preserved bites restaurant in Uptown Hoboken.   

Prior to founding Halifax, Shouse worked from Nantucket Island to Florida before he was tapped by Myriad Restaurant Group to help open the lauded Proof On Main in Louisville, Kentucky. In New York he then headed up the kitchen of Zylo at W Hotel Hoboken, became and then executive chef of the Relais & Chateaux property, Glenmere Mansion in Chester, New York. During his tenure as chef of Glenmere Mansion, Bon Appétit magazine named it one of the Top 40 Hotels for Food Lovers. More recently, Shouse was executive chef of the French seafood brasserie Millesime inside the Carlton Hotel in midtown New York. While at Millesime he worked directly with owner and Two Michelin-star Chef Laurent Manrique.

WHAT: With a combination of storytelling, food, and wine, the evening takes guests on a flavorful journey inspired by Chef Shouse’s book, From the Hill by the Sea — each course reflects one of four chapters: Playing, Catching, Finding, and Hiding (the book will be available for purchase at the class). Dishes will be paired with exceptional bottles from Sonoma-based Flowers Winery. In addition, attendees have the chance to participate in giveaways including a stay for two at Timber Cove Resort (a luxurious retreat on California’s coast) and dinner for two at Halifax (in Hoboken) on November 21, 2024, paired with Flowers Wine.
