WHO: Paul Grieco is the owner-sommelier of Terroir and Bryce Sorem is the chef.
ABOUT: After getting his start at the family restaurant La Scala in Toronto, Canada, Grieco moved to New York and learned about the hospitality business at Remi Ristorante, Bouley (the original location), Gotham Bar & Grill, Gabriel’s, and Judson Grill. In 1995, he worked as a server at Gramercy Tavern and by 1997 Danny Meyer and Tom Colicchio allowed him to oversee the beverage program. He co-founded Hearth restaurant with Marco Canora in 2003 (he left in 2014) and opened the first Terroir, in the East Village, in 2008. Terroir Tribeca opened in the spring of 2010 and has been going strong ever since (a third location thrived in Murray Hill from 2011 to 2015). In the New York Times, Frank Bruni described Grieco as "one of the city’s most knowledgeable, passionate and eccentric sommeliers."
Chef Bryce Sorem was born in San Diego and is described on the Terroir website as possibly "the nicest dude on the planet."
