WHO: Lei Jiang is Chef De Cuisine of Jean-Georges Vongerichten’s The Fulton, on Pier 17, which specializes in seafood. 

ABOUT: Lei Jiang was born on a small island outside of Shanghai called Zhoushan. His mother’s side of the family were fishermen and his father’s side owned restaurants (they made pork buns and dumplings for the town). They moved to New York in 1992, living in Elmhurst for a few years where he was introduced to different foods from Indian, Filipino, South American and Korean cultures. He always knew he didn’t want to be in an office, so he got his first cooking job working banquets at the Hard Rock Café. He attended FCI and then helped open The Nomad Hotel alongside chefs Abram Bissell and James Kent. Next, he worked at the Modern, worked with chef Nate Appleman in New Jersey, and helped open the Fulton, where he rose to chef de cuisine.

WHAT: We’ll be on location inside the kitchen of Jean-Georges Vongerichten’s seafood palace The Fulton — which earned two stars and a critic’s pick nod from The New York Times — cooking alongside Chef de Cuisine Lei Jiang and team, followed by a seated lunch with paired wines.
