The cult of Zach Golper continues to expand. It started when he first opened Bien Cuit bakery in 2011, grew when he published the Art of Bread cookbook in 2015, and has held steady as he’s been nominated for Best Baker by The James Beard Foundation — in 2016, 2017 and 2018. In this class, Zach will demonstrate how to prepare quiches and tarts. An added bonus, you’ll hear how he makes his signature sourdough buckwheat loaves. The bread’s secret weapon: long, low-temperature fermentation that delivers especially complex flavors and a thick crust.
