WHO: Santiago Astudillo is executive chef at The Wesley, a plant-forward restaurant in the West Village. 

ABOUT:  Born in Ecuador, Astudillo spent years refining his skills at fine-dining establishments including Le Bernardin and Daniel. 

WHAT: Astudillo will share recipes that borrow from South American and Middle Eastern cuisines with techniques he developed at 3-Michelin-star restaurants. He'll demonstrate how to get creative with simple, seasonal, ultra-fresh ingredients and the occasional surprise — consistent elements of his modern plant-forward menu. All dishes are strictly vegan.
