WHO: Ryan Bartlow, chef-owner of Ernesto's, and wine director Pierre Derrien
ABOUT: After graduating culinary school in Chicago, chef Ryan Bartlow moved to Spain and cooked at three Michelin-starredAkelarre in San Sebastian. Later, he moved to New York and worked at several restaurants including as executive chef at Frenchette, before opening the Basque-style bar and restaurant, Ernesto's.
WHAT:Ryan Bartlow will showcase his expertise of Basque cuisine with authentic Spanish dishes.
CHEF BIO: Raised in Illinois,Ryan Barlowstudied at Kendall College of Culinary Arts and Hospitality Management in Chicago. After graduating, Ryan followed his love of Spanish cooking and spent the next two years working at three Michelin-starredAkelarre in San Sebastian. Afterward, he returned to Chicago where he was pastry assistant toAlex StupakatAlinea. Next, he moved to New York and joined theFrankie’s Spuntino restaurant group.Following that, Ryan became executive chef atQuality Eatsand then Frenchette.Inspired by his time in Spain, in 2020 he opened his own place, the critically acclaimedErnesto’srestaurant and bar — bringing Basque cuisine to Manhattan.
WINE DIRECTOR BIO: Pierre Darrienearned recognition for spotlighting natural wines at several restaurants in Paris, includingLe BaratinandClown Bar. This is his first New York restaurant.
