WHO: Paramjeet “Param” Bombra is the Executive Chef of Gulaabo in the heart of New York City’s Times Square.

BOUT: Hailing from the picturesque city of Amritsar in the culturally rich Punjab region of Northern India, Bombra spent 10 years refining his culinary prowess within professional kitchens, ascending the ranks in distinguished hotels across India. In 2018, he moved to New York and worked under esteemed chef Sujan Sarkar at modern Indian gastropub Baar Baar. At Gulaabo, a sister restaurant of Baar Baar, he focuses on the cuisine of his native Punjab while showcasing the cherished flavors and traditions of his family's treasured recipes

WHAT: Inside the kitchen at Gulaabo, we'll draw on recipes, spices, and techniques that help great Indian chefs prepare curries, kebabs, and other classic dishes — with a focus on Punjab traditions.
