ABOUT: Tran is a first-generation American by way of Mexico and Vietnam. He grew up in Chicagoland, transitioning to New York in 2009. He began his humble career in restaurants at the age of 16 working the takeout counter at a local pizza joint in the suburbs of Chicago. He later graduated from the Art Institute of Chicago with a degree in Culinary Arts. He cut his teeth in Chicago with respected chefs such as Andrew Zimmerman before moving to New York in 2009 to open West Village classics Joseph Leonard and Jeffrey’s Grocery. Most recently, he worked at Blue Hill at Stone Barns under Chef Dan Barber, and departed in 2020 to take over Falansai in Bushwick, Brooklyn.
