ABOUT: Born in Puerto Rico, Amarilys learned to cook alongside her mother. Her first full-time kitchen position was at Figs in Beacon Hill. Then she crossed paths with Chef-Owner (and winner of a James Beard “Best Chef” Award)  Jody Adams and joined the team at Porto Boston, working her way through the ranks, from line cook to sous chef to executive chef and business director. At Porto Boston, nestled in the heart of Boston’s Back Bay neighborhood, Amarilys found a canvas to explore her passion for Italian cuisine, infusing each dish with layers of flavor and love. Now, she’s embarked on an exciting new chapter as the executive chef of La Padrona, named the best new restaurant of 2024 by Boston magazine. It’s a highly anticipated Italian restaurant from A Street Hospitality, which opened at Raffles Hotel in Boston’s Back Bay. In her new role, Chef Colón curates a menu that celebrates the rich traditions of Italian cuisine while incorporating her own creative flair.
