ABOUT: Bartlow honed his skills at the three Michelin-starred restaurant Akelarre in San Sebastian, then joined the team at Alinea as a pastry assistant to acclaimed chef Alex Stupak. He later moved to New York to cook at Frankie’s Spuntino, Quality Eats and Frenchette. He is now chef-partner at Ernesto’s — his popular, Basque-inspired restaurant (a New York Times Critic’s Pick and one of GQ's top 10 restaurants of 2021).
