PJ Calapa’s demonstrations were so popular at De Gustibus that we finally convinced the chef to host a Saturday class inside the Scampi kitchen. The veteran of Michelin-starred Ai Fiori and partner at The Spaniard will be diving into Southern Italian cuisine — including techniques for his delectable handmade pastas and a focus on seafood.
Class is in the restaurant’s kitchen followed by lunch and wine.
