Before he became executive chef of the Spanish-cuisine-focused Boqueria, Marc Vidal had logged countless hours working under influential chefs at places like el Bulli, L’Arpège and Alain Ducasse. In this class, he asked his chefs de cuisine at each of the four restaurants (Ken Orsi, Gonzalo Vargas, and Carlos Santana) to prepare one regional dish each from their homeland, representing food from Central America, South America and Spain. Think of it as a tapas greatest-hits collection!
