Before he was a prolific cookbook author and columnist at The New York TimesDavid Tanis had cooked with Alice Waters at Chez Panisse in Berkeley and ran the kitchen at critically acclaimed Café Escalera in Santa Fe, New Mexico. In his role as Executive Chef of Graydon Carter’s acclaimed The Monkey Bar, he will share recipes from a creative-American menu that stresses simplicity, seasonality and sustainability.
