Cliff Crooks is the Executive Corporate Chef of ESquared Hospitality group which includes BLT Steak, for which he was the former Executive Chef. Cliff also worked at Gramercy Tavern and appeared on the second season of Bravo’s Top Chef. It’s all about beef and the perfect sides for this class, as Cliff demonstrates signature meat dishes focusing on dry aged steaks from New York Prime Beef, a premier beef supplier in Hunts Point. Joining him is expert butcher, Josh Tanner, who will guide us on the process of dry aging.
