After 10 years leading the kitchen of one of Argentina´s finest restaurants, Azafrán, in Mendoza’s wine country, Pablo Ranea returns to the classroom to teach us his style of new Argentine cooking.  As a chef, certified sommelier and world traveler, Pablo will create extraordinary dishes that are true to his roots and unquestionably mouthwatering.

Amuse:

Humita and goat cheese Empanada

-        Filus Torrontes 2016

-        Corazon del sol Luminoso 2015 (Grenache, Syrah, Mourvedre)

 

1st starter:

Faina, burrata, roasted eggplant and baked tomatoes

 

Wines:

-        Callejon del crimen Petit Verdot 2014

-        Don Nicanor Barrel Select 2014

  

2nd starter:

Octopus, chorizo, chimichurri oil and mashed potatoes

 

Wines:

- Hacienda del Plata Malbec 2014

-Rutini Cabernet-Malbec 2014

 

 

Main Course:

Pork tenderloin, pistachio, Malbec barbecue sauce and crispy cauliflower

 

Wines:

- Gauchezco Oro Malbec

- Gascon Reserve Malbec

  

Dessert:

Chocolate and olive oil ganache, spiced creme anglaise
