Antoine Westermann is the former Chef/Owner of the 3 Michelin starred Le Buerehiesel in Strasbourg, France and is presently the Executive Chef/Partner of Le Coq Rico in New York, based on the restaurant of the same name in Paris. Antoine’s philosophy that “fowl is a world unto itself,” comes to life in this class as he teaches us how flavors and textures of the bird vary based on the region, breed and style of farming used. This is not your every-day chicken!


Antoine Westermann is the Chef of Le Coq Rico, the bistro of beautiful birds, and once won and maintained 3 Michelin stars for his restaurant Le Buerehiesel in Strasbourg, France. In his class, we will discover the delicious value of utilizing every part of an animal. With this "no leftovers" philosophy, we not only create inspiring meals, we also pay respect to the animal itself by minimizing waste. Antoine will open our eyes to new and flavorful ways to enjoy poultry while sharing the importance of making the most out of our food.
